Blueberry Margaritas: 28 Days of Super Bowl Recipes

Blueberries are a fun take on the classic margarita.
Ingredients
  • Per margarita:
  • 1½ ounces (1 shot) tequila
  • ¾ ounce (1/2 shot) Rose's Sweet Lime Juice
  • ¾ ounce (1/2 shot) Blue Curacao (or Cointreau)
  • ¾ ounce blueberry simple syrup
  • Fresh blueberries and a lime wedge for garnish and to adjust tartness.
  • Blueberry simple syrup:
  • 1 12 ounce or 16 ounce bag of frozen blueberries
  • 1 cup sugar
  • 1 cup water
Instructions
  1. In a sauce pan, bring the water, sugar and blueberries to a boil. Let simmer for about 5-10 minutes to thicken into a syrup.
  2. Strain out the blueberries (I saved mine to put on oatmeal later in the week) and cool completely.
  3. Mix the ingredients together in a cocktail shaker with ice and serve.
Notes
Can be made non-alcoholic by using lemonade in place of tequila. Blueberry simple syrup should keep for at least a couple of weeks in the fridge, so feel free to make ahead of time.
