Blueberries are a fun take on the classic margarita.
Ingredients
Per margarita:
1½ ounces (1 shot) tequila
¾ ounce (1/2 shot) Rose's Sweet Lime Juice
¾ ounce (1/2 shot) Blue Curacao (or Cointreau)
¾ ounce blueberry simple syrup
Fresh blueberries and a lime wedge for garnish and to adjust tartness.
Blueberry simple syrup:
1 12 ounce or 16 ounce bag of frozen blueberries
1 cup sugar
1 cup water
Instructions
In a sauce pan, bring the water, sugar and blueberries to a boil. Let simmer for about 5-10 minutes to thicken into a syrup.
Strain out the blueberries (I saved mine to put on oatmeal later in the week) and cool completely.
Mix the ingredients together in a cocktail shaker with ice and serve.
Notes
Can be made non-alcoholic by using lemonade in place of tequila.
Blueberry simple syrup should keep for at least a couple of weeks in the fridge, so feel free to make ahead of time.
